The two premium sous vide circulators, and a genuinely close call decided by one design choice: the Anova has a screen and the Joule does not. Same 1,100 watts, very different philosophies. Here is the mechanism, the specs, and who each is for.

The one difference that decides it

Both draw 1,100 watts, both hold a water bath precisely, both connect over WiFi. The decision comes down to a single design choice: the Anova has an on-device screen and buttons, and the Joule has neither. The Joule is controlled entirely by its app — there is no way to start a cook without your phone. If your phone is always in hand and you like the app, that is a clean, uncluttered design. If it is not, it is a machine that does nothing when your battery dies.

Size and build

The Joule wins decisively on size — it is the smallest circulator on this site, with a magnetic foot that lets it stand in a pan without a clamp, and IPX7 waterproofing. It feels a tier above. The Anova is larger and uses a clamp-and-skirt design, but that size buys the screen and a two-year warranty against the Joule's one.

The documentation gap

This is where the honest reporting matters. Anova publishes its full specification — a 0–92°C range and ±0.1°C accuracy. Breville publishes neither a temperature range nor an accuracy figure for the Joule on any manual we could find. The Joule is certainly precise in practice, but for a device whose entire job is precision, refusing to state the number is a real mark against it, and the kind of gap this site exists to flag.

The decision rule

Buy the Anova Precision Cooker 3.0 if you want an on-device screen, a longer warranty and a fully published specification — for most people, the safer buy. Buy the Breville Joule if you want the smallest, best-built device and you genuinely live in the app. And know that a $95 Inkbird matches both on published accuracy if the premium build is not the point for you.

Does the Breville Joule work without the app?
No. The Joule has no buttons and no screen — it is controlled entirely through the Breville app on your phone. If your phone is dead or the app has an outage, the machine cannot be started. This is the single most important thing to know before buying it.
What is the Joule Turbo mode?
Turbo is a Breville mode that runs the water hotter than the target and circulates faster to reach doneness in, Breville says, as little as half the usual time, then settles to the set temperature. It is a genuine speed feature for weeknight cooks.
