What actually makes a good electric pressure cooker

Once a cooker seals and holds pressure, the cooking is essentially the same across brands — the pot reaches around 250°F and stays there. So the specification that decides a pressure cooker is not how high it goes but how little goes wrong: how the lid seals, whether the pot survives years of use, and whether the manufacturer will tell you what it draws. On all three, the Instant Pot Pro leads — its auto-sealing lid removes the single most common Instant Pot mistake, leaving the valve on Venting.

Working pressure, and why it barely differs

Instant Pot publishes a working pressure of 10.2–11.6 psi (70–80 kPa) on the Duo and Duo Plus manuals. That is deliberately below a stovetop pressure cooker's 15 psi, because an electric cooker trades a little top-end pressure for being safe to leave unattended. The practical result is that cook times are near-identical across every electric cooker here — the differences you feel are the lid, the pot and the interface, not the pressure.

The auto-sealing lid is the real upgrade

If you spend more than the Duo's price, spend it on the Pro's auto-sealing lid. On a Duo you have to remember to flick the steam valve to Sealing before it will pressurize; forget, and it just steams and never comes up to pressure. The Pro seals itself when you close the lid. It sounds minor and it is the thing most first-time Instant Pot owners get wrong most often.

Where the running cost actually lands

A 1,000 W cooker like the Duo costs a fraction of a cent per minute to run, and a pressure cook only draws full power while it is coming up to pressure — once sealed, the element cycles to hold it. The combo units that also air fry (Duo Crisp at 1,500 W, Ninja Foodi at 1,460 W) draw the most, because the crisping element is doing real work. The mechanism, and how to run one well, is here.

What is the difference between a pressure cooker and a multicooker?
A multicooker is a pressure cooker plus other functions — slow cook, sauté, rice, sometimes air fry — in the same appliance. Every electric pressure cooker sold today is really a multicooker; the terms have merged. If a listing says 'pressure cooker' it will still slow-cook and sauté.
How much pressure does an electric pressure cooker use?
Instant Pot publishes a high-pressure working range of 10.2–11.6 psi (70–80 kPa), lower than a stovetop pressure cooker's 15 psi. That is a deliberate safety trade — an electric cooker is designed to be left unattended — and it makes almost no difference to cook times.
Is the Instant Pot Pro worth it over the Duo?
For most people, yes: the Pro adds an auto-sealing lid, a sous vide program, grab-and-go pot handles and five programmable buttons over the Duo, on the same stainless pot. If the price gap is small where you shop, take the Pro. We compare all the models here.
