How to Cook Ribs in an Instant Pot

Ribs are the dish the Instant Pot was made to speed up: a rack that takes three hours low and slow in the oven turns tender in about thirty minutes under pressure. The pot does the tenderizing; a quick pass under the broiler does the caramelized, sticky finish it cannot.

Why the Instant Pot is so good at ribs

Ribs are collagen-rich and tough, which is exactly the cut pressure cookingtransforms fastest. Prep the rack

Start by removing the thin membraneon the bone side of the rack — slide a knife under it, grip with a paper towel and peel it off — because it stays rubbery and blocks seasoning. Then cut the rack into sections of two or three bonesso it fits the pot; most 6-quart cookers take a full rack curled around the inside or stacked on the trivet. Season with a dry rub (salt, pepper, brown sugar, paprika, garlic powder) and, if you have time, let it sit while the pot comes to pressure. Liquid, trivet, and pressure time

Pour about a cup of liquid into the pot — water, broth, or a splash of apple cider vinegar or juice — then set the trivet in so the ribs sit above the liquid rather than boiling in it. Stand or curl the sections on the trivet, lock the lid, and set the valve to Sealing. Cook on high pressure for roughly 25 minutes for baby back ribs and 30–35 for meatier spare ribs, adjusting for how tender you like them. Natural release, then the broiler

When the time is up, let the pressure come down with a natural releasefor at least 10 minutes. This matters for ribs specifically: a quick release yanks moisture out of the meat and can leave it drier and tougher, while a natural release lets the fibers relax and reabsorb their juices. Lift the ribs out gently — they will be very tender — onto a foil-lined tray, brush generously with barbecue sauce, and run them under a hot broiler for 3–5 minutes (or on a hot grill) until the sauce bubbles and caramelizes. That final blast is the whole reason to finish outside the pot: it turns tender-but-pale into sticky, glazed and browned.

The method in one line: peel the membrane, rub, and cut the rack to fit; add a cup of liquid and the trivet; pressure cook about 25 minutes for baby back, 30–35 for spare ribs; natural-release 10 minutes; then sauce and broil for a few minutes to caramelize.
