How to Sous Vide Burgers
Sous vide gives you a burger cooked evenly all the way through, exactly to the doneness you want, with none of the grey-band overcooking a hot pan forces. But ground beef is not steak on the safety front — the rule is different and it matters. Here is the method, the sear, and the honest safety line.

Why sous vide makes a better burger
A burger in a hot pan cooks from the outside in, so by the time the center is done the outer ring is overcooked and grey. Sous vide flips that: it holds the whole patty at one exact temperature, so it cooks evenly edge to edgeto precisely the doneness you want, stays juicy, and cannot overshoot while it waits. Then a fast, hard sear gives it the crust. The method is the same as any sous vide protein — but a burger is ground beef, and that changes the safety rule in a way you must not skip. The ground-beef safety rule — read this first
With a whole steak, bacteria live only on the surface, so a good sear makes it safe. Ground beef is different: grinding mixes any surface bacteria throughout the meat, so the whole patty has to be made safe, not just the outside. That is why the USDA safe minimum for ground beef is 160°F— higher than for steak. Sous vide lets you cook a burger juicier and pinker than 160°F, but only if you make it safe the other way: by holding it long enough at your chosen temperature to pasteurize. Holding ground beef at a lower temperature for a validated time kills the bacteria just as an instant 160°F does — but it only works if you actually hold it long enough, which is exactly why the numbers below belong in a chart, not your memory.
Season, seal, and set the temperature
Form the patties gently (over-packing makes them dense), season the outside with salt and pepper, and seal them in a single layer — the water-displacement methodworks fine, or lay them flat in a bag so they do not get squashed. Set your circulator — a precise machine like the Anova or Inkbird, both ±0.1°C, holds the exact temperature that decides both doneness and, with the holding time, safety. The hard sear to finish
Out of the bag the patty is cooked through but pale, so dry it thoroughly and sear it hard and fast— a screaming-hot cast-iron pan or a grill, a minute or less per side, just to build a brown crust without cooking the inside further. This is also where a slice of cheese goes on to melt. Because the interior is already at temperature, the sear is purely about the Maillard browningand, for a burger, that char is a real part of the flavor — so get the pan as hot as you can and keep the contact brief. Build the burger and serve at once.
The method in one line: form and season the patties, seal them flat, hold at one exact temperature from the temperature guide, then sear hard and fast. On safety, ground beef is not steak: either reach the USDA minimum of 160°F, or, if you cook lower for a juicier burger, hold it long enough at temperature to pasteurize— a function of both time and temperature, following a validated pairing, never eyeballed.
