On the cooking spec, they are close

Start with the numbers that actually determine how food comes out, and the gap is small. The Anova Precision Cooker 3.0 is 1,100 W with a 0–92°C range and ±0.1°C accuracy; the Inkbird ISV-100Wis 1,000 W with a 25–99°C range and the same ±0.1°C. Both have an on-device screen and both have WiFi. For cooking a steak, a chicken breast or a rack of ribs, these two will produce results you could not tell apart — and the Inkbird costs well under half what the Anova does.

What the Anova's extra money buys

Three real things. A two-year warrantyagainst the Inkbird's one — the longest of any circulator on the site, and a genuine consideration for a device that lives in hot water. A more refined app and build— Anova's software is more polished and its documentation is the best in the category (it scores a perfect Documentation mark on our rubric). And a slightly wider low-end range— the Anova reaches down to 0°C, the Inkbird to 25°C, which only matters for a few unusual low-temperature applications.

What the Inkbird gives up, honestly

Less than the price gap suggests. The warranty is half as long, the app is functional rather than polished, the WiFi is 2.4 GHz only, and Inkbird's own spec page has a small internal inconsistency in its listed weight — a sign the documentation is less carefully kept than Anova's. None of that touches the cooking. If you want the most machine for the money and can live with a shorter warranty and a rougher app, the Inkbird is the value champion of the whole site.

The decision rule

Buy the Inkbird if value is the priority — it matches the Anova on the specs that cook, for under half the price, and gives up only warranty and polish. Buy the Anova 3.0 if you want the longest warranty, the most refined app and the best-documented machine, and you cook sous vide often enough to value those. Is the Inkbird sous vide as accurate as the Anova?
On paper, yes — both publish ±0.1°C accuracy. The Anova reaches a slightly wider low-temperature range (down to 0°C versus the Inkbird's 25°C), which matters only for a few unusual applications. For everyday sous vide cooking, their accuracy is equivalent.
